INGREDIENTS

Sweet Osmanthus Simple Syrup

3 tbsp Osmanthus flowers, or any type of light, floral tea
2 cups water
1 cup sugar 

Oatmeal Cake

1 cup Sweet Osmanthus Oatmeal
2/3 cup water, boiled
1/2 cup unsalted butter, softened
1/2 cup brown sugar
1/2 cup white sugar
2 eggs
1 tsp vanilla extract
1 cup (approx.) Sweet Osmanthus Simple Syrup
1 tsp baking sofa
1/2 tsp salt
1 1/2 cups all purpose flour

METHOD

Sweet Osmanthus Simple Syrup

1. In a pot, steep 3 tbsp Osmanthus flowers in 2 cups of water for 5 minutes
2. Stir 1 cup sugar into pot
3. Bring to a boil and stir until mixture is reduced by half
4. Remove from heat and let cool

Oatmeal Cake

1. Preheat oven to 350 degrees and oil a 9" x 9" baking dish
2. Pour boiling water over oatmeal, set aside to cool
3. With a handheld or electric mixer, mix together butter and both types of sugar, until fluffy (approx. 3 minutes)
4. Mix in eggs, vanilla, Sweet Osmanthus Simple Syrup and oats into the wet mixture
5. Pour into baking dish and place in oven for approx. 30 minutes, or until cooked through
6. Let cool on rack and pour Sweet Osmanthus Simple Syrup on top of cake
7. Enjoy warm <3
