INGREDIENTS

3 tablespoons salted butter melted
4 tablespoons brown sugar
2 tablespoons granulated sugar
1 large egg yolk
¼ teaspoon vanilla extract
⅓ cup all purpose flour
¼ teaspoon baking soda
⅛ teaspoon salt
½ cup Yishi Foods Red Bean Berry oatmeal
1 pint XCJ Lychee Rose ice cream

METHOD

Preheat the oven to 325F. Cream together butter, brown sugar, and granulated sugar. Beat in egg yolk and vanilla extract until creamy.
Mix in flour, oatmeal, baking soda, and salt and stir until well-combined.Line a baking sheet with parchment paper. Spoon out 1-2 tablespoons of dough per cookie, leaving room for them to expand. Bake for 10-12 minutes or until the edges start to lightly brown. Remove from the oven and let cool. To make sandwiches, add ⅓ cup of ice cream in between and enjoy!
